| Melitsina is a special species of Thyme that is unique to our region, but Hai Hou is an even more original name... It is taken from old times, when farmers used to extract olive oil by hard manual labour, grinding olives with cumbersome, manually-driven stone mills. They would heave Hai hou! and push the levers of the big, round mills, toiling for hours to produce the finest olive oil in all of Greece. Today, you will see an elegant collection of these old stone mills in the Hai Hou café-bar garden, where they remain displayed as a tribute to this great tradition.
